Chocolate Raspberry Crescent Ring


Ingredients :
  • Pillsbury Refrigerated Crescent Dinner Rolls - 1 can (8 oz)
(You can use the Seamless Dough or the Crescent Rolls, both are refrigerated ones)
  • Chocolate Chips (semisweet) - 1/2 cup
  • Frozen Raspberries - 1 packet (10 oz)
  • Sugar - 1/4 cup
  • Vegetable Oil - 1/2 tsp
  • Cornstarch - tbsp

Method :
  • Open the crescent roll dough as per the instructions on the package. Unroll it on a clean work surface (kitchen counter). Form a big rectangle of the dough by firmly pressing edges and sealing any gaps.
  • Use a microwavable bowl, and melt the chocolate chips along with the oil in the microwave by keeping it uncovered on high for about 2 minutes. You can check and stir in between.
  • Take the melted chocolate and spread it evenly on the rolled out dough.
  • Now roll up the rectangle, starting from one end and seal the edges by pinching them .
  • Use a serrated knife and cut into about 12 slices. Make sure to wipe the knife in between cuts to make it smooth.
  • Grease a large cookie sheet / pizza sheet with cooking spray.
  • Arrange the cut slices on cookie sheet. You can arrange them in a circle, leaning each slice against the previous one. Tuck last one under the first to complete the ring.
  • Heat oven to 350 F.
  • Bake for about 14 to 18 minutes or until golden brown.
  • Take them out on a serving plate using a large flat spatula and again set them up in a ring like shape.
  • Now take a saucepan, mix sugar, raspberries and 1/4 cup water and bring them to a boil over medium-high heat.
  • Break up and separate the raspberries with a spatula. Cook for about 5 minutes, stirring frequently, until the berries burst and mixture starts to boil.
  • Add the cornstarch to 1/4 cup water in a bowl. Stir this mixture into the boiling mixture and continue to cook for about 2 minutes until the mixture is very thick.
  • Switch of the gas and strain the sauce through a fine mesh strainer.
  • Spoon 1/4 cup sauce over the crescent ring. Serve with remaining sauce.

Vanilla Cake (with Egg)


Ingredients :
  • All-Purpose Flour - 1 & 1/2 cups
  • Unsalted Butter (softened) - 1/2 cup (1 stick)
  • Sugar - 1 cup
  • Eggs (at room temperature) - 2
  • Whole Milk - 1/2 cup
  • Baking Powder - 1 & 1/2 tsp
  • Vanilla Extract - 1 tsp
  • Salt - 1/4 tsp
(Original recipe calls for Cake Flour but I used all purpose flour and it turned out just fine.
1 cup Cake Flour = 3/4 cup All-Purpose Flour + 2 tbsp Cornstarch)

Method :
  • Sift the flour, baking powder and salt in mixing bowl.
  • Beat the butter (preferably using an electric mixer on low speed) until the mixture resembles coarse sand.
  • Add in the sugar and beat it until the mixture resembles fine damp sand.
  • Now add and beat in the eggs, one at a time.
  • Time to add the vanilla and milk. Mix on medium-high speed until blended well.
  • Lightly grease (using butter / spray / cake release) an 8 / 9 -inch cake pan. 
  • Heat the oven to 400 F.
  • Pour the cake batter into the pan. Bake for about 30-35 minutes. Before taking out of the oven, check by inserting a tooth-pick in the center of the cake and make sure it comes out clean.
  • Cool cake by setting it over a wire rack for about 5 minutes and then take it out of the pan and cool further over the wire rack.

Oatmeal Chocolate Cookies


Ingredients :
  • Brown Sugar - 1 & 1/2 cups
  • Butter (softened) - 1 cup (2 sticks)
  • Egg - 1
  • Oats (quick-cooking) - 2 cups
  • All purpose flour - 1 & 1/2 cups
  • Chocolate chips (semisweet) - 1 cup
  • Baking soda - 1 tsp
  • Vanilla extract - 1 tsp
Optional
  • Walnuts (chopped) - 1 cup

Method :
  • Get the butter out of the refrigerator and let it get soft at room temperature.
  • Mix the brown sugar and butter until blended.
  • Add in the vanilla extract and the egg. Mix until light and fluffy.
  • Mix in the oats, flour, baking soda. Also add the chocolate chips and the chopped walnuts if you using it. You can use a stand mixer or knead slightly with hand after mixing with a spoon
  • Preheat the over to 350 F.
  • Slightly grease the cookie sheet with butter / spray.
  • Place tablespoonful of the dough on the cookie sheet, about 2 inches apart from each other. You can also make small balls and pat them to make small cakes and place them on the sheet.
  • Bake for about 9-11 minutes, or until they are golden brown in color.
  • Cool slightly and then take out the cookies from the sheet and place them on a wire rack.
