Ingredients :
- All-Purpose Flour - 1 & 1/2 cups
- Unsalted Butter (softened) - 1/2 cup (1 stick)
- Sugar - 1 cup
- Eggs (at room temperature) - 2
- Whole Milk - 1/2 cup
- Baking Powder - 1 & 1/2 tsp
- Vanilla Extract - 1 tsp
- Salt - 1/4 tsp
(Original recipe calls for Cake Flour but I used all purpose flour and it turned out just fine.
1 cup Cake Flour = 3/4 cup All-Purpose Flour + 2 tbsp Cornstarch)
Method :
- Sift the flour, baking powder and salt in mixing bowl.
- Beat the butter (preferably using an electric mixer on low speed) until the mixture resembles coarse sand.
- Add in the sugar and beat it until the mixture resembles fine damp sand.
- Now add and beat in the eggs, one at a time.
- Time to add the vanilla and milk. Mix on medium-high speed until blended well.
- Lightly grease (using butter / spray / cake release) an 8 / 9 -inch cake pan.
- Heat the oven to 400 F.
- Pour the cake batter into the pan. Bake for about 30-35 minutes. Before taking out of the oven, check by inserting a tooth-pick in the center of the cake and make sure it comes out clean.
- Cool cake by setting it over a wire rack for about 5 minutes and then take it out of the pan and cool further over the wire rack.
