Tater To Egg Breakfast Casserole

I had been seeing this on many magazines and blogs and couldn't wait anymore to make it. Seemed easy and filling, even good for dinner.



Ingredients :
  • Tater tots - 32 oz


  • Eggs - 12
  • Milk - ½ cup
  • Salt - 1 tsp
  • Pepper - 1 tsp
  • Green onions (chopped) - 1/3 cup
  • Grated cheddar cheese - 2 cups


Method :

  • Preheat oven to 350 F.
  • Spray the bottom of a 9x13 baking dish with cooking spray.
  • Place all the tater tots on the bottom of the pan. Maybe you have two layers, but that is just fine.
  • Chop the green onions.
  • Beat the eggs in a large bowl.
  • Add milk, salt pepper, and the onions to the beaten eggs. Mix well.
  • Add cheese to this egg mixture and yet again mix well.
  • Pour this mixture over the tater tots.
  • Bake at 350 F for 1 hour.
Enjoy hot!!
